Certified organic, careful harvest at night, and separated by plot. De-stemmed. Fermentation and settling occur at low temperatures. The wine is fermented in stainless steel tanks at cool temperatures for 7 to 8 days. Unfined and lightly filtered prior to bottling. Additional Information about the packaging: All primary packaging for this bottle of wine, which includes the bottle and crate it was delivered in, are reusable. If you are interesting in buying this wine, we strongly encourage you to also collect the bottles and return them to their crates for collection, washing and reuse. Bottles are 500g and have been tested and approved by “Réseau consigne” in France and they are meant to be reused up to 50 times without any risk of breakage. The labels meet the specifications of the “Réseau Vrac et Réemploi” in France. The paper is uncoated, unplasticized, without hot foil stamping or varnish. The inks are silicone-free and the glue is water-soluble.

It is a true polyculture that includes cereals, orchards and vines. The couple took over the estate from Thierry's grandparents in 2003. The estate has been certified organic since 2012 to ensure its longevity for generations to come. Today, their daughter is learning from Thierry and preparing to run the vineyard!
